The Umbria Region, without any access to the
sea and with only one lake basin (the Trasimeno, with a 128
square-km surface, is the largest lake of Central Italy), is full of
a rich fish fauna made up of several different species and much
estimated, because the water environments, though they are
small-sized, are different from one another and clear and clean.
Fishing in Umbria is much practiced as a hobby, as a sport or as a
job itself.
The "Carpa" (Round Fish) is very famous. It can be
excellently tasted in the recipe "Regina in Porchetta" ("Whole
Roasted Queen"). As a matter of fact the Round-Fish is the "Queen of
the Lake" and is said to be cooked "in porchetta" when it is
flavoured and spiced just like it happens with the pork.

Even the Jackfishes, the
Basses, the Eels and the Bleaks normally end up in the pan along
with the Round-Fish, in order to make the famous fresh water fish
soup also called "Tegamaccio", an important course of Umbrian
Gastronomy.
Among the fish fauna
samples the Tench, the White Fish and above all the Trout must not
be forgotten; the last one, besides being fished in the environments
it likes most (i.e. the segments of mountain rivers of Valnerina),
it is also grown up inside fish colture basins, where cold water is
"poured" from mountain streams and
